Christmas Eve Eve








The 23rd was the big arrival date.  Mom made a giant double batch of brimming  Hobo Soup Gypsy Stew.

Yield: 10-12 Hefty Servings

6 Chicken breasts, cooked, shredded
6 Yellow Onions, peeled quartered
15 Garlic cloves
1 Quart pineapple juice and canned OJ
1 16 oz can chicken broth
4 1/2 Cups roasted and peeled fresh green chiles
2 24-oz cans diced tomatoes
2 teaspoons salt or to taste
1 pound Monterey Jack cheese
1 package corn tortillas cut into strips and fried (set aside)

Combine all except the cheese and tortillas.  Let simmer for an hour or so.

Put cheese in bottom of the bowl.  Top with heaping helping of strips.  Devour and go back for seconds.

Each evening we squoze (not a word) into the family room for a devotional conducted by Dad.  We sang and shared and shushed the kidlets.

There was a spot at the table for everyone.  It was a miracle.
