A Light Lunch for a Busy Monday


A healthier, more flavorful Chicken Salad Sandwich. Seriously, you won't go back to your old recipe once you give this one a go!
1 free-range rotisserie chicken, chicken removed and shredded
1/4 cup mayonnaise
1/4 cup buttermilk
1 Tablespoon Dijon Mustard
1 Tablespoon fresh lemon juice
1/2 to 1 teaspoon hot sauce
2 celery stalks, finely chopped
1/2 small red onion, finely chopped
1/4 cup chopped fresh parsley
combine mayo through parsley, whisk, add shredded chicken, mound upon sunflower seed bread, add lettuce...oh, and some yellow heirloom tomatoes as an afterthought (see below).
