Craig left for a shift yesterday at 4:30 and doesn't get home until 8pm tonight. Three kids slept in for the first time in their lives, so I breakfasted solo. Three kids ALL napped at the same time for the first time in their lives, so I lunched alone. Three kids went to bed at 6pm like they do every night, so I dined unaccompanied.
Lunch: No-nitrate club sandwich with provolone, alfalfa, and carrot on an asiago bagel
Dinner: roasted eggplant, tomatoes, portobellos, and broccoli resting on some arugula
A few months ago, remains of mac and cheese, some apple slices with peanut butter, cold cereal, and perhaps a few triangles of a cheese quesadilla would have appeared in these photos. I'm reclaiming my nutrition. It can't wait for nor upon anyone.
If I must eat alone, I will eat WELL, alone.
