Table For One

Riddle: Who is surrounded by people all day, yet eats alone for every meal?
Answer: Me


Craig left for a shift yesterday at 4:30 and doesn't get home until 8pm tonight. Three kids slept in for the first time in their lives, so I breakfasted solo. Three kids ALL napped at the same time for the first time in their lives, so I lunched alone. Three kids went to bed at 6pm like they do every night, so I dined unaccompanied.

Breakfast: another green bowl of goodness, this time with the sweetest cantaloupe ever to be cut

Lunch: No-nitrate club sandwich with provolone, alfalfa, and carrot on an asiago bagel





Dinner: roasted eggplant, tomatoes, portobellos, and broccoli resting on some arugula

pre-roasted delights




A few months ago, remains of mac and cheese, some apple slices with peanut butter, cold cereal, and perhaps a few triangles of a cheese quesadilla would have appeared in these photos. I'm reclaiming my nutrition. It can't wait for nor upon anyone.

If I must eat alone, I will eat WELL, alone.

For the sake of the strong and bright future that nutritious healthful eating provides!!! I want that bright future.

Well, that beats anything I have eaten this week. I am flying solo until next Thursday evening at 10pm. Wanna join me and my chaotic bunch? I am afraid my dinners have consisted of me eating crusts and the slim pickins of what is left on their plate.

I am glad they are sleeping fabulously for you!

Oh Jordan. I can feel your pain. I haven't seen Eric since last night, and I won't see him until I get home from work tomorrow. Sometimes I can be productive when I am alone (and eat well), and other times I curl up with a good book and a bowl of cereal.

You can come join me anytime. It might be a little crazy with three littles, but it's been done!

I had cheerios for dinner tonight. How's that for a feast in Matt's absence. Wanna trade? I'll throw in a sliced banana. Not all bad though, it means no cooking for me and that is more often than not welcomed by me!

Yes Stephanie! Do! I'll be gone to P-town through the fourth of July (Ann is getting married), but after that, let's hook up. But, honestly--the good grub is over at the Nielsons!

Jordan, I will PAY for a Jordan Recipe book! I seriously think you have a gift for creating culinary delights. I remember years ago Craig mentioning that he had never had the same meal twice cooked by you. Are you both still going strong with this? You're amazing!!!

You have inspired me and I'm trying to resist eating the bits of leftovers or day-old cookies left from everyone else for my meals. It makes a difference when i take care of myself.

I agree with Katy - these meals are not just gorgeous, they are smart - it is too easy to stand at the sink and eat the last 4 bites out of the bottom of the mac and cheese pan (my lunch yesterday) washed down by Coke, of all things, but really - it doesn't feel good! Good show, Jordan!

Wow, I do a terrible job of taking care of just me. My lunch yesterday was goldfish pretzels. You are inspiring me to do better with this.

And, I just have to say -- three simultaneous naps for the first time! That is cause for celebration!!

I have no skills and wouldn't even know where to start with those beautiful meals of yours. Isn't dining alone wonderful if it means kids sleeping in and napping at the same time? It sounds good to me. I love a quiet house when contrasted with the busy noises of the day. How wonderful that they all go to bed at 6:00 too, at least you have some good relaxing time in the evenings.

finally getting a moment to check in and am loving your food! i'm so impressed you cook for just you. something i'm getting better at but i make nothing as colorful as you. i'm curious about some of your recipes and food as well as your kids sleeping schedules. i know you had hazel sleeping through the night earlier than my two did and i would love some advice on this as i would like #3's sleep to go a little smoother. perhaps i'll email you...

Oh la la la la! I would be thrilled with any one of those meals! I tend to not want to bother with fixing much when it's just for me, but you are seriously tempting me to make more of an effort. What a delight that your kids go to bed at 6pm!!
